Recipe Review: Blueberry Microwave Muffins

Last night I was surfing the web looking at pictures of food and I came across a recipe for Blueberry Flax Microwave Muffins from Spark Recipes (original recipe here).  I decided to try this recipe and this morning and unfortunately it did not turn out perfectly.  The recipe calls for flaxseed meal, which I did not have, so I used almond meal (they're basically the same thing, right?)  The recipe also calls for 1 egg which I realized I did not have until after I had mixed about half of the ingredients.  So I looked up an egg substitute and used 1 1/2 tablespoons of oil and 1 1/2 tablespoons of water.  I mixed it all up and it sort of looked like black sludge...oh well.  I moved on and put my suspicious-looking-muffin-mixture into the microwave for 90 seconds.  After 90 seconds I checked the muffin and it was raw.  Really raw.  So I cooked it for 10 more seconds.  Still raw.  I ended up cooking it for about 30 extra seconds and it was still more like oatmeal than a muffin.  I had my mom be the taste-tester and judging from her face, it was not good.  I tasted it and it basically tasted like almond meal and syrup.  Bleh.  Maybe it was because I used almond meal or didn't use a real egg, but this recipe just didn't work for me.
